Sometimes I Surprise Myself

What a busy week we just completed!

The night before Memorial Day we got 60 hundredth of rain, so J and I decided to make a run to the Hills.  My list was not that long, Thank Goodness!  As we were pushing our filled cart out of Sam’s we met a guy in the parking lot laughing.  He looked at us and said “This is the $200.00 store.  You can’t get out the door for less than $200.00!”

On the way home we stopped to visit Auntie and Uncle M.  I bartered with Auntie and gave her eggs in exchange for rhubarb.

Throughout the week I made rhubarb jam, Marge’s Rhubarb Dessert,  and muffins.

I got all the ingredients to make the Pioneer Woman’s Restaurant Style Salsa.  It is a favorite at our house; I make this instead of buy salsa.  I have a few modifications to PW’s original recipe that I will share here

Wednesday afternoon I didn’t get much done.

Thursday I mowed the lawn.  It was in the mid 80’s!  I also cleaned the kitchen and entryway.

Friday I finished up cleaning the house and worked on laundry.  I have had a craving for my Mom’s second signature pie, Fresh Fruit Pie.  So, I made one.

J has been busy checking cattle.  He has to make sure the livestock are in, doing well and have plenty of salt, mineral and water.  Needless to say, curious yearlings have a tendency to disregard the fence.  J has had to get wandering heifers in twice this week.  J went on a parts run on Thursday and the neighbors female production sale on Saturday.  Saturday morning J told me the last cow calved!

Now we are back to the beginning of another week.  What this week will bring is anyone’s guess; I just hope the sun keeps shining!

Do you have weeks where you amaze yourself with progress?  What is your favorite rhubarb recipe?

    Hi Robyn,
I have a wonderful rhubarb dessert that is almost like a chiffon when finished. It’s wonderful! Also strawberry/rhubarb desserts are great.
