My Favorite Apple Cake

J’s Mom, Miss B, makes a Fresh Apple Cake that is delicious.  It’s one of my favorite cakes.  A few years ago I found a Spiced Apple Dessert recipe at Taste of Home.  Just  my luck, it was basically the same recipe.  The Taste of Home version was basically a half recipe of Miss B’s, just the right amount for J and I!

I like the recipe so much I make muffins out of it too!  I substitute honey for the sugar and use a combination of white whole wheat flour and whole wheat flour.  Depending on the day I might toss in raisins or dried cranberries.  It’s kind of like cake for breakfast.


1 C All-Purpose Flour

1 C Granulated Sugar or ½ C Honey

1 tsp Baking Soda

1 tsp Ground Cinnamon

1/4 tsp Salt

1 Egg, Lightly Beaten

2 C Shredded Peeled Tart Apples

1/4 C Chopped Walnuts


In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. Combine egg and apples; add to flour mixture and mix well. Stir in walnuts.

Transfer to an 8-in. square baking dish coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean.

To add a little dessert pizzazz top Apple Cake with Caramel Ice cream Topping or Homemade Caramel Sauce and maybe a scoop of ice cream!  

Cake or muffin, plain or pizzazz this flexible recipe can work for different types of occasions and taste buds.

    Oh now that looks and sounds delicious I truly am going to try this. It looks pretty easy and even though I am going crazy busy around here I want some now:) Hugs B
