Marge’s Rhubarb Dessert

Last week I got some rhubarb from J’s Auntie.  I made some freezer jam;  J and my Dad always request jam.  I also flipped to a rhubarb dessert recipe in the Family Cookbook.  After eating kebabs for supper this was a very sweet way to round out the meal.

Marge's Rhubarb Dessert


1 Yellow Cake Mix and Ingredients as called for on back of cake mix box.

4 C. chopped rhubarb

2 C. sugar

1 can (12 oz) Evaporated Milk

Mix up cake mix according to directions on the box.  Put in a deep 9 X 13 inch pan.  I made 2 – 8 X 8 pans. 

Sprinkle 4 cups chopped rhubarb over the uncooked cake.

Sprinkle 2 cups sugar over the rhubarb.

Pour evaporated milk over the top.  I have also heard of ladies using cream instead of evaporated milk.

Put the unbaked dessert on a cookie sheet or something that will catch any gooiness that may run over the top of the cake pan.

Bake at 350 degrees for 1 hour or until golden brown on top and tests done in the middle.  My 2 – 8 X 8 pans of dessert took forever to bake and I am not sure why!  I am thinking it is the same something that tinkered with the grill knob.

This is a sweet custard like dessert and a great way to enjoy fresh rhubarb!

    This year I tried this recipe using cream and I loved it. I had always wanted to try it in the past. I have made 4 different kids of rhubarb bars/cake this spring and canned some rhubarb sauce. I also have some in the freezer. I love rhubarb!!

    I have been making a similar version for years only make it as an upside down cake and it takes forever to cook! Trying your version today 🙂
