Labor Day Weekend – Food

Over Labor Day weekend we got together with friends.  Our Husbands went to college together, us girls get along great, and we always have fun!  This time we met at M and J’s house.

One of the things we enjoy about our gatherings is the food!  The hostess plans the main menu and the other two girls fill in with breakfast items, fruits or veggies, chips/dip/salsa, and various sweets.  Here is a sample of what we ate:

K’s Peach Salsa

1 Jar Red Roasted Bell Peppers, diced

3 Large Peaches, diced – Nectarines can also be used

Red Onion, diced

1-2 Jalapenos, diced

1/2 Bunch Cilantro, chopped

Juice of 1 Lime

Salt and pepper, to taste

Add all ingredients to a large bowl and stir well.

Season with salt and pepper.

Serve with tortilla chips.

Meat Master M grilled a whole beef tenderloin!

Just in case you are wondering; 6 adults and a first grader can polish off all that delectable beef in one sitting!

J sauteed green beans and mushrooms to go with the tenderloin.

Miss J tried a new recipe from How Sweet It Is; Peanut Butter Fudge Pretzel Brownies.   The brownies made a short and tasty appearance, not to be forgotten, and certain to appear again someday!

Breakfast Pizza

Saturday night we had an All American Grill Out … hamburgers, brats, sweet corn, watermelon, garden veggies and more!

Miss J and K both confessed to the fact neither of them can get banana bread to turn out!  I guess I will have to carry the burden of being the  Chocolate Chip Banana Bread baker in the group.  They also keep me around for my farm fresh eggs!

It is a treat to cook with “the girls”, try new foods, and enjoy the company of great people.  Labor Day Post Part 2 coming on Wednesday.
