As you know, I love to cook and bake. They are a creative outlet for me. I spend time reading cookbooks, recipes, and blogs.
Sometimes, I just toss stuff together. Leftovers that need to be used up. I consider it a bonus when I can use up several things in the makeover meal.
Every once in a while I make one of these “clean out the fridge” type meals and get the best compliments from my Cowboy. I am usually stunned buy the comment. Then I have to quickly write down what I did in hopes of ever repeating it again.
Today I am sharing one of those meals. Easy, speedy, scrumptious.
First, I start with some chicken. I roasted a package of chicken breasts for another meal and had 2 breasts left to use. I shred or pull the meat and place it in a small sauce pan. I add salsa and taco sauce. Sorry, no measurements. I just make sure the chicken is well covered and moist enough to stand the heat.
Next come some big decisions:
#1 Corn tortilla, flour tortilla, hard shell, or a bed of greens.
#2 How do you want your tortilla? Fried, baked, warmed, or cold?
#3 Toppings – lettuce, onion, peppers, tomatoes, beans, cheese
#4 Condiments – More salsa, taco sauce, or sour cream?
As you can tell the varieties are plentiful and flexible. Red onion or white? Green, red, orange or yellow peppers? Re-fried or black beans? Cheddar or Pepper Jack Cheese? How about cilantro? What do you have to use up?
To assemble cover a cookie sheet with parchment paper.
Place tortilla on parchment paper.
Select toppings and stack on tortilla.
Stick it in the oven and melt cheese.
Add condiments and enjoy.
My personal preference is a whole wheat tortilla or bed of greens with lots of veggie toppings and a little cheese. Maybe some sour cream. J is a tortilla, lettuce, meat and lots of cheese, and sour cream kind of guy.
Sometimes, the need to clean out the refrigerator can make the most delicious Cowboy approved meals.
