Blueberry Muffins

When I got married J, the wife of my husband’s cousin, put together a family cookbook for my shower.  She gathered and typed recipes, had the book printed and spiral bound, and then gave it as a gift to our extended family.  It has been a wonderful resource of family favorites, especially for a new bride.

J submitted this recipe for Blueberry Muffins in the Family Cookbook.

1 ¾ C flour

½ C Sugar

¼ tsp salt

1 egg

¼ C oil (I use applesauce)

¾ C milk

2 C frozen blueberries (I chopped mine)

Pre-heat oven to 400 degrees.

Combine dry ingredients.

Stir in liquid ingredients.

Fold in chopped blueberries.

Fill greased muffin cups ¾ full and bake 18-20 minutes.

I tend to fill the cups full, and bake them 24-26 minutes.

Just for kicks I zested a lemon and added it to a batch of muffins.

I have also had good luck using frozen raspberries instead of blueberries.
