I saw this recipe on Pinterest. Jessica posted these brownies on her blog before I started following her. Otherwise I would have shared it with you a long time a go.
Just so you know this is a MUST TRY recipe. And after you eat on them a few days you also must try to button your pants. Sharing is a good thing, because everyone will love you for making these brownies!
I made these brownies when we gave the cows their pre-calving shot. Apparently Better-Than-Crack tickles the funny bone. Heidi from My Simple Country Living left this comment, “I am so glad you shared and the title “better than crack” brownies made me nearly fall out of my seat laughing too.” Apparently Candy at the Lazy J Bar C Farm did fall out of her chair “Better-than-crack brownies!! ROTFL!!” was her comment. Thanks Ladies … I need a good laugh too.
Instead of using a boxed brownie, I made brownies from scratch. Of course, I used Jessica’s brownie recipe from here.
The only brownie batter change I made was to bake them in a 9 X 9 inch pan vs. an 8 X 8. After seeing the pictures of these brownies I knew and 8 X 8 was never going to be big enough to hold all this chocolate and peanut butter goodness.
I didn’t have salted peanuts or peanuts of any kind, so I just added more chopped peanut butter cups. I forgot the 1/2 T of butter and added an extra 1/2 C of Rice Krispies Cereal. I added the extra cereal as my topping didn’t look as crunchy as the picture.
1/2 C Butter, at room temperature
1 1/2 C Sugar
2 teaspoons Vanilla Extract
1 1/4 C All Purpose Flour
1/4 teaspoon Salt
3 T Cocoa Powder
1/2 C Chocolate Chips
Preheat oven to 350
Butter a 9 x 9 cake pan.
Cream butter and sugar until fluffy.
Add eggs one at a time
Then add remaining teaspoon of vanilla.
Add in cocoa powder and mix until combined.
Add flour and salt, mixing well until batter is smooth and comes together.
Fold in 1/2 cup chocolate chips.
Spread in the 9 x 9 pan. Bake for 25-30 minutes.
Better Than Crack:
1 1/2 C Reese’s Peanut Butter Cups, chopped
1 1/2 C Milk Chocolate Chips
1 1/2 C Creamy Peanut Butter
2 cups Rice Krispies Cereal
Top baked brownies with peanut butter cups, and bake for 4-6 minutes more.
While they are finishing baking, melt chocolate chips, peanut butter. Stir in cereal. Remove brownies from oven and evenly pour chocolate mixture over top.
Refrigerate for 2 hours before serving.
So, these brownies are AWESOME! The Hubby says the only thing better than these brownies is putting the brownies in a bowl and adding a scoop of ice cream.
