Baked Beans

Beans, beans, the magical fruit!  Here is a recipe I found a few years ago.  I tweeked it to make the little things even more thrilling.

I really enjoy beans, but don’t make them very often.  J is not a bean eater; beans of any kind.  This recipe makes a big batch and is my favorites.  When we had a few people over for J’s birthday I knew I would be in the company of bean eaters.

3 strips bacon, cooked and crumbled

1 – 28 oz can Baked Beans

1- 15 oz can White Beans

1 – 15 oz can Red Kidney Beans 

1 c. Catsup

 1/2 c. Water

1/4 c. Brown Sugar

3 Tbsp Vinegar

1/8 teasp Black Pepper

Mix up the sauce and add the bacon.

In a small bowl, combine catsup, water, brown sugar, vinegar, pepper and, crumbled bacon

Put baked beans, white beans, and kidney beans in the crock pot.  Add catsup mixture.  Stir to combine.

Look at all those beans!

Cover and cook on low-heat setting for 4 to 6 hours or on high-heat setting for 2 to 3 hours.

Just for fun I added a little spice to this batch of beans. Honestly, I had the ingredients on hand and needed to use them up.

I diced and sauteed:

1 small Red Onion

1 Jalapeno

1/2 of a Red Pepper

1 large clove of Garlic

My additions tasted spectacular!

Beans, beans, the magical fruit … may not be so magical the next morning.  But, they are sure good to eat!  Left overs of this recipe are delicious too!

    Sounds like a good recipe! I’m not a bean lover… I’m usually over the bean fever by mid-June. They always seem like a good idea with burgers and brats from the grill, but I’ve had enough for the summer after 2 or 3 times. Chili, however, is a different story!
