A Little Funfetti

Last week the Veterinarian came to Bangs Vaccinate heifers.  We vaccinate replacement heifers against Brucellosis, which is a bacterial disease that causes cattle to abort late-term fetuses.

This was a short notice operation.  J and I sorted the heifers off the steers the night before.  The next day the vet came and so did Cousin T and neighbor B.

I mixed up a batch of Cowboy Beef and Black Bean Chili and put it in the crock pot.  I had Buttermilk Wheat Rolls in the freezer and made a veggie tray.  My only issue was dessert.  Deep in the freezer I found the last box cake mix … Funfetti!

I made the cake according to the directions on the back of the box, adding a cup of white chocolate chips to the mix.  I baked it in my bunt pan; I thought it would be pretty. 

After the cake cooled I frosted it with left over Almond Cream Cheese Frosting and topped it off with some fun sprinkles.  Hungry guys like pretty cakes you know.

The Veterinarian was early, the cattle worked good and my meal was a success!  Ranch Wife life at it’s best. 

Yesterday, was a holiday off from the town job.  The Rancher and I helped Cousin T run cows through the chute.  Another beautiful day to do cattle work with great people.  In the afternoon J and I did some prep work for calving.  The bred heifers are getting close.

Friday night and Saturday I baked up a storm as my freezer was empty.  I made Chocolate Chip Banana Bread/Muffins and Chocolate Chip Cookies.  I also made Pineapple Banana Bread (an old favorite) and tried 2 new recipes.  I stumbled upon a Blondie recipe via Pinterest and another yeast bread recipe from Miss Candy.  Recipes coming in future blogs posts.
